Homemade Mayo


2 room temp. eggs

1/4 cup extra light olive oil or avocado oil

1/4 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon garlic powder

2 teaspoons dry mustard

Juice from 1/2 of a lemon ( this is optional) 

1 3/4 cups extra light olive oil or avocado oil

Directions:

Add eggs, 1/4 cup oil, salt, pepper, garlic powder and dry mustard to a food processor once blended well, SLOWLY add the 1 3/4 cup oil.  Add the oil 1/4 cup at a time and let the food processor do the work.  Once all of the oil is blended, taste, add more spices is desired then refrigerate. 

You want to make sure that your of your ingredients are at room temperature, this is key to make sure that everything emulsifies.  Let your eggs and lemon sit out on the counter for a few hours prior to making the mayo.
